For a healthy treat that reminds you of far-off exotic locales, try this Baked Tropical Fruit dish.
3 ripe peaches, peeled and sliced
2 large ripe bananas, peeled and sliced
1 ripe mango, peeled and sliced
1 (15.5 oz.) can pineapple chunks in juice, drained
vegetable cooking spray
¼ cup firmly packed brown sugar
½ cup unsweetened applesauce
1 Tbsp. butter-flavored granules
1 tsp. curry powder
- Combine the first 4 ingredients in an 11 x 7 x 1½-inch baking dish coated with cooking spray. Combine brown sugar, applesauce, butter-flavored granules and curry powder, and spread over fruit.
- Bake uncovered at 350 degrees for 30 minutes or until fruit is tender and mixture is hot and bubbly.
Yield: 12 servings
