This Banana Bread recipe makes use of whole wheat flour, which is combined with all-purpose flour for a tender yet nutritious bread.

3/4 cup all-purpose flour
3/4 cup whole wheat flour
1 teaspoon baking powder
1 teaspoon baking soda
1/2 cup sugar
2 tablespoons margarine, melted
4 medium-size ripe bananas, peeled and mashed
1 egg, lightly beaten
Vegetable cooking spray

  1. Combine first 4 ingredients in a large bowl. Combine sugar and next 3 ingredients; add to flour mixture, stirring just until dry ingredients are moistened.

  2. Pour batter into an 8 1/2 x 4-1/2 x 3-inch loaf pan coated with cooking spray. Bake at 350° for 50 minutes or until a wooden pick inserted in the center comes out clean. Cool in pan on a wire rack 10 minutes; remove from pan, and cool completely on wire rack.
