HS Food: Apricot-Walnut Bread
1 cup all-purpose flour
1/2 cup whole wheat flour
1/2 cup regular oats, uncooked
2 teaspoons baking powder
1/3 cup sugar
1/2 cup finely chopped dried apricots
2 tablespoons coarsely chopped walnuts
3/4 cup skim milk
1/4 cup unsweetened applesauce
1 egg, lightly beaten
Vegetable cooking spray

Combine first 5 ingredients in a large bowl, and stir well. Stir in apricots and walnuts, and make a well in center of mixture. Combine milk, applesauce, and egg in a bowl; add to dry ingredients, stirring just until dry ingredients are moistened.

Pour batter into a 9- x5- x3-inch loafpan coated with cooking spray. Bake at 350 degrees for 45 minutes or until a wooden pick inserted in center comes out clean. Let cool on a wire rack 10 minutes; remove from pan, and let cool completely on wire rack.
