Linguine with Marinara Sauce

This tasty classic is a great source of vitamin C and potassium.

Olive oil-flavored vegetable cooking spray
1 C chopped onion
1/2 C chopped green pepper
1/2 C shredded carrot
1/2 C sliced celery
2 cloves garlic, minced
3 C peeled, chopped tomato
1 (6-ounce) can tomato paste
1 1/2 t dried basil
1/2 t dried oregano
1/2 t salt
1/2 t sugar
8 ounces linguine, uncooked

  1. Coat a nonstick skillet with cooking spray; place over medium-high heat until hot. Add onion and next 4 ingredients; sauté 5 minutes or until tender. (Add water, 1 tablespoon at a time, if needed, to tenderize vegetables.)
  2. Add tomato and next 5 ingredients; bring to a boil. Cover, reduce heat, and simmer 45 minutes.
  3. Cook pasta according to package directions, omitting salt and fat. Drain. To serve, spoon sauce over pasta.

Yield: 8 servings

Serving size: 1/2 cup pasta and 1/2 cup sauce
