The following recipe relies on white wine to make a flavorful sauce. When alcohol is cooked, the calories are greatly reduced but the rich flavor remains.
Serves 8
4 (4-ounce) skinned, boned chicken breast halves
¼ cup all-purpose flour, seasoned with salt and pepper
2 tablespoons olive oil
1 pound red potatoes, quartered
1 (8-oz) package sliced fresh mushrooms
1¼ cup dry white wine
¾ cup chicken broth
1 teaspoon pepper
½ teaspoon salt
1 large sweet onion, quartered
1 bay leaf
Cut each chicken breast half into 4 pieces; dredge in flour, salt and pepper. Heat oil in a Dutch oven over medium heat; add chicken and cook until lightly browned, stirring occasionally.
Add potato and remaining ingredients to Dutch oven. Cover, reduce heat, and simmer 30 to 35 minutes or until vegetables are tender. Remove and discard bay leaf.
