
1 medium cantaloupe, peeled and cut into 8 rings
8 lettuce leaves
2 cups fresh blueberries
1 cup low-fat sour cream
2 tablespoons brown sugar
1/4 teaspoon vanilla extract
Place 1 cantaloupe ring on each of 8 lettuce-lined salad plates. Spoon 1/4 cup blueberries into center of each cantaloupe ring.
Combine sour cream, brown sugar, and vanilla in a small bowl, stirring well with a wire whisk. Top each salad with 2 tablespoons sour cream mixture.
