1 1/3 cups small macaroni shells, uncooked
1 cup chopped cooked chicken breasts (skinned before cooking and cooked without salt)
1/3 cup diced celery
3 tablespoons sweet pickle relish
1 tablespoon balsamic vinegar
1/3 cup plain nonfat yogurt
1/4 cup low-fat mayonnaise
1/8 teaspoon pepper
1/8 teaspoon paprika
4 lettuce leaves
Additional paprika (optional)
1. Cook pasta according to package directions, omitting salt and fat. Rinse with cold water, and drain. Combine pasta, chicken, and next 3 ingredients; set aside.
2. Combine yogurt and next 3 ingredients in a small bowl, stirring well. Add yogurt mixture to pasta mixture; toss lightly to coat. Cover and chill. To serve, place 1 lettuce leaf on each of 4 salad plates. Spoon ¾ cup pasta mixture onto each lettuce leaf, and sprinkle with additional paprika, if desired.
