Scalloped Butternut Squash and Apples

1 (2-pound) butternut squash\
Cooking spray
2 Rome apples, cored
¼ cup brown sugar
1 tablespoon butter substitute (such as Smart Balance), melted
1 tablespoon all-purpose flour
¼ teaspoon salt

  1. Cut butternut squash in half lengthwise; remove and discard seeds. Peel squash and cut into ½-inch-thick slices. Place in a 13 x 9-inch baking dish coated with cooking spray.
  2. Cut apples into ½-inch-thick slices, and place on squash in baking dish. Set aside.
  3. Combine brown sugar and remaining 3 ingredients in a small bowl. Sprinkle sugar mixture over apple. Cover and bake at 350 degrees for 30 minutes; uncover and cook 20 to 30 additional minutes or until squash is tender.
