1 qt 2% low-fat milk
1 1/2 C fat-free egg substitute
3/4 C sugar
1 12-oz can evaporated skimmed milk
6 large ripe bananas, peeled and mashed
2 T lemon juice
1 T vanilla extract
- Combine first four ingredients in a large bowl.
- Add mashed banana, lemon juice, and vanilla, stirring well.
- Pour mixture into freezer container of a 6-quart hand-turned or electric freezer. Freeze according to manufacturer’s instructions. Pack freezer with additional ice and rock salt, and let stand 1 hour before serving.
