
1 cup all-purpose flour
1 cup whole wheat flour
1 1/2 teaspoons baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
1 teaspoon ground cinnamon
1/3 cup firmly packed brown sugar
2/3 cup unsweetened apple juice
1/4 cup unsweetened applesauce
1/4 cup vegetable oil
1 teaspoon butter and nut flavoring
2 egg whites, lightly beaten
2 cups peeled, chopped apple
2 tablespoons chopped walnuts
Vegetable cooking spray
- Combine first 6 ingredients in a bowl, and stir well; make a well in center of mixture.
- Combine brown sugar and next 5 ingredients in a bowl. Add to dry ingredients, stirring just until dry ingredients are moistened. Fold in apple and walnuts.
- Spoon batter evenly into muffin pan coated with cooking spray. Bake at 400 degrees for 20 to 22 minutes or until lightly browned. Remove from pans immediately.
