Apple-Nut Muffins

1 cup all-purpose flour
1 cup whole wheat flour
1 1/2 teaspoons baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
1 teaspoon ground cinnamon
1/3 cup firmly packed brown sugar
2/3 cup unsweetened apple juice
1/4 cup unsweetened applesauce
1/4 cup vegetable oil
1 teaspoon butter and nut flavoring
2 egg whites, lightly beaten
2 cups peeled, chopped apple
2 tablespoons chopped walnuts
Vegetable cooking spray

  1. Combine first 6 ingredients in a bowl, and stir well; make a well in center of mixture.

  2. Combine brown sugar and next 5 ingredients in a bowl. Add to dry ingredients, stirring just until dry ingredients are moistened. Fold in apple and walnuts.

  3. Spoon batter evenly into muffin pan coated with cooking spray. Bake at 400 degrees for 20 to 22 minutes or until lightly browned. Remove from pans immediately.

Yield: 1 1/2 dozen
