1/3 cup bulgur, uncooked
1 ¼ cups water, divided
Vegetable cooking spray
½ pound freshly ground raw turkey
½ cup chopped onion
1 (28-ounce) can crushed tomatoes, undrained
1 (15-ounce) can black beans, rinsed and drained
1 (4-ounce) can diced green chiles
2 teaspoons chili powder
2 teaspoons cocoa powder
1 teaspoon ground cumin
Combine bulgur and ¾ cup water in a medium bowl; let stand 15 minutes or until water is absorbed. Set aside.
Coat a Dutch oven with cooking spray; place over medium heat until hot. Add turkey and onion; cook until meat is browned, stirring until meat crumbles.
Add bulgur, remaining ½ cup water, tomatoes, and remaining ingredients, stirring well. Bring to a boil; cover, reduce heat, and simmer 30 minutes, stirring occasionally.
Yield: 7 (1-cup) servings.
